SCD foods for the 4th week in January
zucchini bread
This week I made a great almond flour zucchini bread from the Against All Grain website. The recipe was easy enough. I made a double batch and used a medium sized zucchini to get the 2 cups of zucchini needed. Everything worked out well following the recipe. The only adjustment I needed was a longer bake time (roughly 45 minutes). I now have . . .
Vancouver Lake Half Marathon
13.1 miles, PR, PB
I finished the Vancouver Lake Half Marathon on Sunday. The race went great. The weather was perfect, high 40s, foggy, without a breath of wind. The race field was fast, 11 people ran faster than 80 minutes (that's 6:00 per mile or faster!). I was lucky enough to find a fellow runner at my pace and we knocked off 11+ miles of the race . . .

Squash Meatballs and Nut Butter Squash Brownies
Every week I would like to highlight an SCD recipe or a couple of SCD recipes that I really enjoyed. I have been loving my butternut squash this winter. Last time I went through the checkout at the grocery store my cashier couldn't believe how much I was buying. It came in at 16 lbs of BNS!

My race focus this winter will be for the Credit . . .

Usually 20 or 30 people show up for a work out and people break up into smaller running groups based on their pace and the scheduled run. This week was a bit unusual as the scheduled run was "predict your . . .
An Introduction To My Running
Running, Lactic Threshold, Ulcerative Colitis, Anemia
I enjoy running. I enjoy the competitiveness of races. I enjoy the improvement that can be achieved through practice. I enjoy the simplicity of the activity.
I have been running consistently for the past two years. I started out training with my wife for the 2013 Shamrock Run 8k held on St. Patrick's Day weekend in downtown . . .
The Cost of My UC Medication
Humira, Lialda, Prednisone
I am ending my usage of Humira for the treatment of ulcerative colitis because my doctor has determined that it is ineffective. While I am sad that the treatment didn't work, I am happy to be ending such a costly medication. How costly you may ask? While I had my first dose of Humira on May 16th. This was a quadruple dose (160 mg) to . . .
