SCD foods for the 3rd week in January
Squash Meatballs and Nut Butter Squash Brownies
Every week I would like to highlight an SCD recipe or a couple of SCD recipes that I really enjoyed. I have been loving my butternut squash this winter. Last time I went through the checkout at the grocery store my cashier couldn't believe how much I was buying. It came in at 16 lbs of BNS!
I used that squash as an filler for a couple of foods this week. The first of these foods was Squash Meatballs. For this recipe I used 1 lb of ground beef and 1 lb of country sausage. In addition to the ingredients listed in the recipe I also added two pieces of pressed garlic, 1/2 cup of parmesan cheese, 2 tsp parsley, and 2 tsp oregano. The sausage, cheese and spices added a nice kick to the otherwise bland meatball recipe.
The other squash infused treat was Nut Butter Squash Brownies. These are great treats that are super easy to make. Check out the final product below.
